Gullivers Peanut Coleslaw

Recipe for the peanut coleslaw served at Gulliver's Restaurant.

Gullivers Peanut Coleslaw Ingredients
- 6 cups of shredded cabbage
- 1/4 cup of green onions
- 1/3 cup of chopped celery
- 1/3 cup of unsalted, roasted peanuts
- 2 tablespoons of sugar
- 1-1/2 teaspoons of seasoned salt
- 2 tablespoons of red wine vinegar
- 2/3 cup of Italian salad dressing

Gullivers Peanut Coleslaw Instructions
Mix the cabbage, green onions, celery, and peanuts in a large bowl. in a separate container mix the vinegar, salad dressing, sugar, and salt, and mix well or shake until well blended. Pour the liquid mixture over the cabbage and vegetables and toss until the cabbage is coated with dressing.

This peanut coleslaw recipe was published in the 1981 Los Angeles Times California Cookbook. That edition is currently out of print but 2007 Los Angeles Times Cookbook can still be found in bookstores.
