Magic Castle Rum Butter Glazed Carrots

Recipe for the rum butter carrots served at the Magic Castle in the 1980's.

Magic Carrots Ingredients
- 1 (1 pound) can of baby carrots
- 2 tablespoons of butter
- 3 tablespoons of sugar
- 1 teaspoon of rum flavoring

Magic Carrots Instructions
Drain the carrots. Melt the butter in a saucepan and add the sugar, rum flavoring, and carrots. Simmer until the sauce just begins to thicken and the carrots are glazed with the sauce mixture.

This glazed carrots recipe was published in the 1981 Los Angeles Times California Cookbook. That edition is currently out of print but 2007 Los Angeles Times Cookbook can still be found in bookstores.
